How to cook Osaka-style Okonomiyaki

お好み焼き (Osaka-style Okonomiyaki)

①Making from flour

Ingredients(2 piecies) :

[A] Mixture:

  • Flour … 100g
  • Egg … 1egg
  • (as desired) [天かす(Tempura bits) … 10g-20g]
  • (as desired) [紅しょうが (Pickled ginger) … 10-20g]
  • お好み焼きソース (Okonomiyaki sauce) … suitable quantity
  • (as desired) [マヨネーズ (Japanese mayonnaise)] … suitable quantity
  • (as desired)かつお節 (A bag of bonito flakes) … 2g
  • Salad oil … a large spoonful

 

A recipe for cooking ‘Okonomi-yaki

1. Chop some sliced pork in 15cm length and cabbage leaves in 2cm square.

2. Dissolve Dashi powder in water to make a soup stock. Put all the mixture of [A] into the stock and mix them well. Add that cabbage (and seafoods) leaves just before cooking.

3. Heat frying pan coated with salad oil. Pour the mixture [2] on the pan to fry it for a few minutes until it gets brown on its back surface. Put some slices of pork to cover the top and turn it upside down. Keep the heating power low until it gets fried completely.

4. Turn it upside down again, and spread thick “お好み焼きソース” (Okonomiyaki sauce) and Japanese mayonnaise on the top, and sprinkle the bonito flakes over as much as you like.


② Very simple way to make “Okonomi yaki” with “Okonomi yaki-ko”.

Ingredients(2 piecies) :

  • Thinly sliced pork or beef … 100g
  • (as desired) Sea food (Squid, octopus, shrimp, etc)… suitable quantity
  • Cabbage … 300g
  • Water … 100ml

[A] Mixture:

  • お好み焼き粉 (Okonomiyaki flour) … 100g
  • Egg … 1 egg
  • (as desired) [天かす(Tempura bits) … 10-20g]
  • (as desired) [紅しょうが (Pickled ginger) … 10-20g]

 

  • お好み焼きソース (Okonomiyaki sauce) … suitable quantity
  • (as desired) [マヨネーズ (Japanese mayonnaise)] … suitable quantity
  • (as desired) かつお節 (A bag of bonito flakes) … 2g
